That also means that our managers know the business inside and out. It takes exceptional management skills, integrity, attention to detail and customer service knowledge to manage one of our restaurants. Pappas Restaurants also has an amazing Fast-Track Management Program. We recruit the best and brightest from college campuses and job fairs from all over the country to join this four to five month training program that rotates though all the various positions in the restaurant.

Pappas L.A.B. (Leadership and Beyond)
LAB is Pappas Restaurants' continuing education program for managers. They are classroom style courses that are offered several times a year and are tailored to teach critical skills needed for a manager to progress through the Management Advancement Program (M.A.P.)
Student (Level 6)
The classes in Level 6 focus on introducing new managers to the basic nuts and bolts of being a Pappas Manager. Here a new manager will learn topics such as Human Resources 101, The Safety Quiz, Managing the Bussers and our most popular class—A Shift in the Life of a Floor Manager, which participants get to experience what a typical day is like for a Floor Manager.
Staff Developer (Level 5)
This group of classes is designed to teach more seasoned managers on the finer points of developing a winning staff. Participants encounter topics such as Retention and Motivation, Inclusion, and most importantly Time Management.
Management Developer (Level 4)
As a manager moves further along in their career, they begin to assume the role of mentor to newer managers. Level 4 LAB classes are designed to teach the skill set that is needed to develop the next generation. Topics taught at this level include Goal Setting, Finding Your All Star and Developing Your Farm Team.
Leadership Challenge (Levels 3)
At this point in a manager's career, it's time to start focusing on the Leadership skills that are required to run the restaurant in the General Managers absence. Participants will encounter a wide variety of topics that are geared to understanding the business as a whole—Developing Loyal Guests and Branding, Understanding Financial Reports and Maximizing Profitability.
