Luby’s Culinary Services, operated by Pappas Restaurants Inc., is in search of a Chef that is committed to quality! The Chef is responsible for the daily operation of the assigned account and partners with the Executive Chef and Leadership to achieve company goals. This position maintains compliance and operation excellence in retail, production, and patient services while maintaining a safe and sanitary work environment for the staff.

• Directs preparation of all food by the kitchen staff.
• Follows standardized recipes, portioning, diet modifications, and presentation standards.
• Oversees and is responsible for daily purchasing maintenance of the food preparation system, order book, recipe file, inventory, and storerooms. Completes and utilizes daily production worksheets and waste log sheets.
• Ensure quality and quantity meet established standards and specifications.
• Ensures proper food handling, storage, and safety procedures are followed. Supervises the production of all special diets.
• Trains kitchen staff in food preparation, safe handling, equipment operation, food safety, and sanitation based on Facility and Regulatory standards.
• Maintains a clean, sanitary working environment.


• Must be at least 18 years of age
• Must be able to work in a team-oriented environment
• High school diploma/GED required
• Associate degree in culinary arts degree from a recognized Culinary school or Associates Degree in Hospitality Management preferred
• Minimum of 3 years of successful food service production management experience, knowledge of hospital food service and nutrition operations.
• Must be able to communicate effectively, both verbally and written
• Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or associates of the organization.
• Possesses the necessary skills to effectively operate an automated food production system. Ability to operate a standard computer, including proficient use of MS applications such as Excel and Word.
• Certificates, Licenses, Registrations: ServSafe certified within one (1) month of date of hire.
